Apple & Butternut Squash Soup

  • 3 cups apples, cored and chopped
  • 3 cups butternut squash, peeled and cubed
  • 1 cup sweet onion, peeled and roughly diced
  • 2 tbsp. butter
  • 1 tbsp. grated ginger
  • 1/8 tsp. freshly grated nutmeg
  • 1 1/2 cups apple cider
  • 3-4 cups of liquid (equal parts chicken stock and water, or for a vegetarian option, equal parts cider and water)
  • Brittany Gray, Fleur de Sel, or other World Gourmet Sampler salt, Salts of the 7 Seas

Saute butter, squash, apples, and onion for 5-7 minutes in a large soup pot. Add a cup of water to help steam squash. Cover and simmer 30 minutes, or until squash is tender. Blend mixture with a hand immersion blender or food processor, in batches if necessary. Return mixture to pot and add nutmeg, ginger, and cider. Add remaining liquid until desired consistency. Season with chosen salt from Salts of the 7 Seas and serve with a spot of sour cream or Greek yogurt.
