Banana Chocolate Chip Muffins

Yield: 12 muffins

  • 2-3 really ripe bananas
  • ½ cup vegetable oil
  • 1 egg
  • 1 tsp vanilla
  • 1 cup sugar
  • ½ cup chocolate chips
  • 2 cups flour (sifted)
  • 1 tsp baking soda
  • ½ tsp Vanilla Bourbon Infusion salt
  • ½ tsp cinnamon

Prepare a 12 cup muffin tin with either cooking spray or cupcake liners. Preheat the oven to 350 degrees Fahrenheit. Mash bananas with a fork in a small bowl.

Then, combine oil, egg, vanilla and sugar in a large bowl. Stir the ingredients until the mixture is a yellow color. Stir in the bananas and then add the chocolate chips. Add the flour, baking soda, salt and cinnamon, and stir until all of the ingredients are fully incorporated.

Scoop the mixture into the muffin tin, filling each one ¾ of the way. Bake the muffins for 25 – 30 minutes. Let them cool for 10 minutes on a cooling rack.

Serve with milk or coffee!
