Despite its name, Iceland actually enjoys a fairly mild climate, due to the jet stream just beneath the Arctic Circle. From the very beginning, Iceland has been a contradiction of itself—at once Ice and Fire from its volcanic activity, still quite active today. As daylight is at a premium, there is little vegetation and trees and nothing to really burn like coal to create heat, Iceland turns to its plentiful volcanic geothermal heat to evaporate the pristine North Atlantic sea waters to produce a delightful crisp and flaky, whole mineral sea salt that is becoming quite popular around the world as a finishing salt.
